Adobo seasoning

Lends a Tex Mex touch to any rub or marinade.

Story

You always need to watch out for gluten (and other additives) in pre-made seasonings. Gluten and dextrose are used as an anti-caking agent, and MSG is used as an artificial (and dangerous) flavor enhancer. If you can’t find a pure adobo seasoning mix, its easy to make your own.

Ingredients

1 Tbsp cumin seeds
1 Tbsp coriander seeds
1 Tbsp fennel seeds
1 Tbsp mustard seeds
1 Tbsp of red pepper flakes
1 Tbsp of Spanish paprika
1 Tbsp Mexican oregano (you can substitute Italian oregano if you can’t find Mexican)
1/2 tsp onion powder
1/2 tsp garlic powder

Instructions

In a dry skillet over medium-low, heat cumin, coriander, fennel, mustard and chile pepper flakes. Toast, stirring constantly until fragrant, about 3 minutes. If it begins to smoke, its done. When cool enough to touch, grind using a mortar and pestle, or spice grinder.  Place in a small bowl, along with the remaining ingredients, and mix well to combine.
