Danish Sweet and Sour Red Cabbage (Rødkål)

A traditional Danish addition to the Christmas table, using maple syrup and fruit juice as sweeteners


3 Tablespoons bacon fat
1 Tablespoon grass-fed butter, ghee or soy-free margarine
1 head of purple cabbage, shredded
1/2 cup cran-apple or apple juice
2 apples, peeled and chopped
1/2 cup raisins
1/4 cup maple syrup
1/4 cup apple cider vinegar
salt and pepper to taste


Heat bacon fat and butter in a heavy saucepan. Add cabbage, stirring until coated. Add the remaining ingredients, bring to a boil, then cover and simmer for an hour. Adjust the flavors for sweetness if needed, then simmer, uncovered for another half an hour.
