Eat a Rainbow and Get Those Phytonutrients!

Fruits and vegetables are chock full of phytonutrients – the chemical compounds in plants that have beneficial properties, such as vitamins, minerals and antioxidants.  Often the brighter the color of the plant, the more powerful are its phytonutrients. Different plants have different phytonutrients with different beneficial properties. That’s why its important to eat a variety of fruits and vegetables, not just your favorites! Of course, lots of green is always good. 🙂

    My name is Taylor Anderson and I am currently a senior dietetics student at ASU. I teach health and nutrition classes through an internship with United Food Bank, and recently came across your ‘Eat A Rainbow’ coloring sheet for children.
