This classic salad is meal all on its own. Its already “Primal.” Just omit the cheese and it becomes Paleo.
Story
You could easily add anything you want to this salad, but there is something about the the egg, avocado, and bacon combination that makes it so good. In the classic version, Roquefort is also added. There is still debate over whether blue cheeses are gluten-free, so if you opt to add the cheese, please be sure its safe!
Ingredients
2 hard boiled eggs
1 avocado
2 cups cooked chicken breast, diced
6 slices of cooked bacon, crumbled
1/2 cup scallions, green and white parts*, chopped
1/2 cup black olives
1 head of Romaine, rinsed and torn into 2-inch pieces
1/2 cup of gluten-free blue cheese (optional)
Instructions
Place Romaine on each plate. Top evenly with the remaining ingredients.
Traditional Cobb salad is served with French dressing. You can either serve with a mixture of your homemade ketchup, mixed with mayo and a little olive oil and apple cider vinegar. Or you can do a simple olive oil and lemon juice dressing.
