Roasted Brussels Sprouts with Bacon and Pecans


2 pounds of Brussels sprouts
4 ounces of bacon, diced
3 shallots, diced
1/3 cup of pecans, chopped


Preheat oven to 425 degrees F.

Place the bacon in the bottom of a roasting pan, spread in a single layer. Roast in the oven until it begins to sweat, about 10 minutes.

Meanwhile, rinse the Brussels sprouts and trim any brown leaves. Cut the Brussels sprouts in half. Add the Brussels sprouts, shallots and pecans to the roasting pan in a single layer. Cook for 20 minutes or until sprouts begin to brown and bacon is crispy.
