Gluten-Free Paleo Sloppy Joes

What kid doesn’t enjoy getting messy? These gluten-free paleo Sloppy Joes are delicious, wholly satisfying, and made with only wholesome, healthy ingredients


1 1/2 lbs. ground beef
1 medium onion, diced
1 medium bell pepper (color of your choice), diced
4 cloves of garlic, minced
1 Tablespoon of olive oil
3/4 cup beef stock (homemade is best!) or bone broth
4 Tablespoons apple cider vinegar
3 Tablespoons mustard (I like Dijon)
1/2 to 1 Tablespoon chili powder (depending on your heat preference. I used plenty without it bothering my kids)
salt and pepper to taste
3 Tbsp tomato paste


Heat the olive oil in a medium saucepan over medium-high heat. Add the onions, peppers and garlic and saute until softened. Add the ground beef and cooked until browned, breaking apart the pieces as you stir.  Add the remaining ingredients and simmer until slightly thickened Рabout 10 minutes.

Serve on gluten-free or grain-free rolls, or get really sloppy and wrap in Iceberg or Romaine lettuce! Don’t forget the napkins (and aprons, too)!
