What kid doesn’t enjoy getting messy? These gluten-free paleo Sloppy Joes are delicious, wholly satisfying, and made with only wholesome, healthy ingredients
2 lbs. ground beef
1 medium onion, diced
1 1/2 medium bell pepper (color of your choice), diced
4 cloves of garlic, minced
1 Tablespoon of olive oil
1/4 cup beef or chicken stock (homemade is best!) or bone broth
3 Tablespoons apple cider vinegar
3 Tablespoons mustard (I like Dijon)
2 Tablespoons paprika
salt and pepper to taste
3 Tbsp tomato paste
Heat the olive oil in a medium saucepan over medium-high heat. Add the onions* and peppers and sauté until softened. Add the garlic* and sauté another two minutes. Add the ground beef and cooked until browned, breaking apart the pieces as you stir. Add the remaining ingredients and simmer for 10 to 20 minutes until your reach desired consistency and the flavors are nicely melded.
Serve on gluten-free or grain-free rolls, or get really sloppy and wrap in Iceberg or Romaine lettuce! Don’t forget the napkins (aprons, too)!
* for lowFODMAPs cook the onion and garlic first then remove from pan and add the oil back to the pan.
