Sweet Potato “Fries”

Sweet, simple and wholly satisfying.

Story

With a 4 and 6 year old in the house, we keep things simple. While these baked sweet potato fries could easily be dressed up with the seasoning of your choice, they really are perfect just the way they are. My kids have been devouring these for years. When they’re palates grow up a bit, we may add cayenne pepper. 🙂

Ingredients

3 medium sweet potatoes
About 1/2 Tablespoon of olive oil
Salt & Pepper to taste
*optional seasoning of your choice

Instructions

Preheat oven to 425 Fahrenheit.

Cut potatoes in half length-wise, then width-wise.  Continue cutting until you get rectangular shaped “fries”.  Toss with olive oil, salt and pepper, and any other seasoning you desire.

Place on a cookie sheet. Bake for 25 minutes, or until golden on the outside and soft on the inside, turning over half-way through. Or, if you want them crispy, turn them over every 5 minutes until done. Let cool slightly, and serve!
