White Beans with Herbes de Provence

A super, simple side dish gets dressed up with the addition of French herbs.

Story

This is a super quick side dish, that my children love. I stock my pantry with lots of canned Cannelini or other white beans (try to choose BPA-free cans, like from Eden Foods). This way I always have a side dish I can prepare, without thinking twice. I’ve even had grown-ups tell me how delicious it is, thinking its some complicated recipe!

Ingredients

1 15 oz. can of white beans (Navy or Canellini are our favorite), drained
1/2 a medium yellow onion, diced
a splash of olive oil
1 1/2 teaspoons Herbes de Provence
salt and pepper to taste

Instructions

Heat olive oil over medium heat. Add the Herbs de Provence and the onion. Saute until the onion is softened. Add the beans, salt and pepper and stir. Reduce the heat to low and simmer for about 5 minutes or until accumulated liquid has thickened. Serve!
