This book is an eye-opening look at the real truth behind why we get fat. Like most people, I was conditioned to believe that eating fat was what made us fat, and so I dutifully adhered to a low-fat diet to keep my slim figure throughout my twenties and thirties. Unfortunately, this resulted in a diet that was often missing in taste, or if I overloaded on even “healthy” fats, I often felt guilty about it. I was so happy to learn through this book, that it isn’t fat after all that makes us fat but 1) excess calories of any kind and 2) carbohydrates. But even if you stick to a plan that burns more calories than you consume, vigorously exercising and consuming little, you can still have problems with weight control. Why? Because if you are eating too many of the wrong kind of carbs, you are putting your body on an insulin-spiking treadmill that it will never be able to get off of. That is the true reason as to why we get fat.
Gary Taubes explores the science behind fat accumulation, hormones, and fats vs. carbs in our diets, as well as the politics behind why we have all been told that fat is our enemy for nearly thirty years. His exploratory research and unbiased unveiling of the truth makes this book and important and exciting read. I highly recommend it.
